600g ground beef
4egg yolks
2tablespoons Hugo Reitzel capers
8Hugo Reitzel gherkins
2tablespoons olive oil
2teaspoons mustard
A few sprigs parsley or chives
salt and pepper
How to prepare

Mix the meat with the olive oil, then season with salt and pepper.

Peel and finely chop the shallots and gherkins.

Drain capers to remove excess vinegar.

Arrange the minced meat in a round shape, then make a slight indentation in the top using the back of a spoon.

Add egg yolk to each meat and chopped parsley or chives.

Finish by arranging the shallots, gherkins, capers and mustard around the meat.

Serve immediately!
