SPAGHETTI WITH GARLIC AND SUN-DRIED TOMATOES

What you need

200g spaghetti
10g sun-dried tomatoes
50g pitted olives
1shallot
1clove garlic
2tablespoons Colavita, Selezione Classica extra virgin olive oil
salt & pepper
Fresh oregano

How to prepare

Clean and chop the shallots. Crush the garlic and roughly chop the oregano.

Cut the sun-dried tomatoes into strips and the olives into small pieces.

Cook the pasta in salted water until al dente.

Heat the olive oil in a frying pan over a medium heat and sauté the shallots and garlic for a few minutes.

Add the sun-dried tomatoes, lower the heat and cook for around 10 minutes, adding a few ladles of pasta cooking water if necessary.

Pour the drained pasta into the sauce with a ladleful of pasta cooking water, stirring well.

Serve with cheese to taste and fresh oregano.
