1jar HUGO French pickles in vinegar
1knob butter
4eggs
3tablespoons cream
Espelette pepper
How to prepare

Melt a large knob of butter, then beat the 3 eggs and cook over low heat.

At the same time, prepare the gherkin siphon:

Blend 6 large gherkins in a blender, very finely, then infuse with 1⁄4 of a liter of cream for 10 minutes.

Then place in the siphon in the fridge for one hour.

Add the gas caps, activating strongly from bottom to top.

For 1 half-litre siphon, use two gas cartridges and shake vigorously.

As soon as cooked, stir in 2 tablespoons cream.

Fill 3 shells with scrambled eggs.

Scramble each egg, then sprinkle with Espelette pepper.

Add 1 gherkin slice to garnish.
