1jar of HUGO French gherkins in vinegar
300g crozets
1onion
200g smoked bacon
1whole raw milk Reblochon cheese
200g crème fraîche
Butter
salt and pepper
How to prepare

Cook the crozets in plenty of boiling salted water for 15 minutes. Drain at the end of cooking.

Peel and chop the onion, then fry in a knob of butter for around 5 minutes. Add the bacon and cook for a further 10 minutes. Add the crème fraîche and reduce over a medium heat for around 5 minutes. Season to taste with salt and pepper.

Place the crozets in an ovenproof dish. Add the cream, bacon and onion mixture and place the Reblochon cheese, cut in 2, on top.

Place in the oven for approximately 25 minutes at 180°C.

Serve with salad and HUGO French pickles in vinegar.
