Preheat oven to 180°C.

Roll out the shortcrust pastry, then cut out circles the size of the tartlet molds. Spread with mustard, then prick the bottom and bake for 10 minutes.

In an oiled frying pan, sauté the onions for 5 minutes with the sugar and balsamic vinegar, until lightly colored and caramelized. Season with salt and pepper.

Arrange the onions on the tart shells, then sprinkle with thyme and crumbled fresh goat's cheese.
