How to prepare
Prepare the tartar sauce: peel and finely chop the shallot. Cut the HUGO sweet and sour French gherkins into small cubes, snip the chives and chop the capers.
Mix the mayonnaise, shallot, capers, chives and HUGO French gherkins in a bowl. Season with salt and pepper.
Prepare 3 shallow dishes. In the first, add the flour and cornflour and mix. Add the beaten eggs to the second and the breadcrumbs to the third.
Spread the fish fillets in the following order: flour, beaten eggs, then breadcrumbs. Make sure the fillets are well coated at each stage.
Heat a little oil in a frying pan. Once the oil is hot, fry the fish, turning halfway through. They should be golden brown on both sides. Allow to cook for around 2-3 minutes on each side, depending on the thickness of the fillet. Then place the fillets on absorbent paper to remove any excess oil.
Serve the breaded fish with mashed peas, tartar sauce and chips.
