What you need

8HUGO French vinegar and shallots gherkins
600g ground beef
4egg yolks
4shallots
2tablespoons capers
2tablespoons olive oil
2teaspoons Dijon mustard
2tablespoons chopped flat-leaf parsley
3tablespoons chopped chives
2tablespoons ketchup
0.5lemon juice
4drops Tabasco
Salt
Pepper

How to prepare

Mix the egg yolks in a bowl with the mustard and the juice of half a lemon. Season with salt and pepper. Drizzle in the oil, whisking regularly as if making mayonnaise.

Add the chopped steak to the sauce. Mix with a fork, then stir in the ketchup, chopped shallots, capers, chives and chopped parsley. Add a few drops of Tabasco (taste before adding more than 4 drops).

Adjust seasoning.

Refrigerate or serve immediately.

Arrange the minced meat in a round shape, then make a slight indentation in the top with the back of a spoon. Serve the tartar with home fries, toasted baguette and green salad.
