ORIENTAL PASTA SALAD

What you need

1jar of HUGO French pickles in vinegar
120of pasta
60g almonds
40g pistachios
1vegetable stock cube
20g flat-leaf parsley
20g mint
80g dates
80g mayonnaise
1lemon juice
2teaspoons garlic powder
2teaspoons curry powder
2tablespoons olive oil
2tablespoons salt

How to prepare

Bring a large volume of water to the boil and cook the pasta according to the packet instructions, with the vegetable stock.

Coarsely chop the pistachios and almonds. Roast them in a frying pan over a medium heat for 10 minutes, stirring regularly. Set aside.

Wash the mint and parsley. Chop as finely as possible and set aside.

In a bowl, mix together the lemon juice, mayonnaise n juice, mayonnaise, curry powder, olive oil, salt and garlic powder.

Place the cooled pasta, diced dates, sliced gherkins, herbs and sauce in a salad bowl.

Mix well and serve chilled.
